Here’s a salad that you’ll definitely want to try before summer is over! Thanks to our friend Joelle, Ashlee and I tried this delicious salad at a sugar-free wine tasting party. We’ll post more on the sugar-free wines soon, but we didn’t want to wait too long on posting this great salad while peaches are still in season. Here’s Ashlee’s recreation of the peach, basil, and mozzarella salad:
5 peaches cut into chunks
Fresh Mozzarella cheese – cut into chunks
Basil – ripped apart. You will need a solid handful of basil for the full salad.
Olive oil – about 2 tsp depending on the amount of peaches you use.
Salt and pepper to taste
Cut your peaches and mozzarella into chunks. Add the fresh basil and drizzle your olive oil on top. Add salt and pepper to taste. Super easy and something different that everyone will love!
